    A cozy, two-story omakase spot in Higashiazabu where the cooking is quietly serious without being the least bit stuffy. The chef spent years in Paris, Copenhagen, and San Francisco, and you can taste all of it, applied to Japanese ingredients with real restraint. Everything on the plate earns its place, waste is genuinely minimized, and the kitchen is fully open, so you watch the whole thing unfold. It's on Asia's 50 Best list, and it deserves to be.
