Jean-Georges Vongerichten's Latin American restaurant sits inside the Four Seasons, but the bar tables face the Gulf and a live band eventually takes over the room. Ceviche, tacos, sizzling shrimp, and crispy fried chicken share the menu in a way that shouldn't quite work but does. The salted flan and a passion fruit sundae the size of a small ambition close things out. Dress nicely; this is not a casual Tuesday.
