On the 36th floor of Josun Palace, this contemporary Korean tasting menu restaurant sends out illustrated cards in place of a written menu, one per course, each naming the season's key ingredient. The room is all glass and greenery, floor-to-ceiling windows framing the Gangnam sprawl far below. Chef Son Jong-won's cooking leans into fermentation and tradition, then quietly surprises. It holds a Michelin star and sits on Asia's 50 Best list.
