  1. The juwari soba here is made from raw buckwheat flour, hand-pulled into noodles that come out fine and almost silky. This is an old-school soba shop in the old Edo neighborhood of Ryogoku, where the crockery, the interior, and the general atmosphere all feel like they've been quietly refusing to modernize for a very long time. The chef sources buckwheat and seafood from across Japan with the devotion of someone who considers it a personal matter.
