  1. A sushi counter on Taimei-dori in Ginza where the fish arrives cured, simmered, or marinated in the old Edomae tradition rather than simply sliced raw. The chef trained for years in the neighborhood before opening here, and the room carries that same unhurried quality. The rice is seasoned lightly so the toppings lead. Classic technique anchors everything, but the nigiri keeps one foot pointed somewhere new.
