Visits begin with a kitchen tour and an oyster snack prepared in a flame-licked cone, which sets the tone neatly. Juniper smoke, reindeer, and various Scandinavian ingredients that probably had a better morning than you follow. The room holds a Michelin star, and the service team is warm enough to balance the theatrical primitivism.
