This two-Michelin-starred restaurant in the old town runs a vegetable-forward tasting menu with a "leaf to root" philosophy taken to its logical extreme, drawing entirely from the region. The front-of-house team fields questions about the food with enthusiasm rather than impatience, which says something about the room.
