Tempura Japanese
Tatami mats, a low table, and a chef frying tempura directly in front of you, which is the old ozashiki style and feels more like a private dinner than a restaurant visit. The one Michelin star tempura counter on the third floor of a Sonezakishinchi building pairs its sesame-oil-fried pieces with champagne and white wine, the argument being that the acidity lifts the flavors. Tokyo trained the palate; Osaka trained the hands.
