  1. Tuna comes first at this Hiroo omakase counter, which is the chef's way of telling you exactly what kind of sushi chef he is. The Michelin-starred set moves through sashimi and small bites before a deliberate vegetarian pause resets the palate ahead of nigiri. Botan shrimp and Minamiuonuma shiitake turn up among the toppings, and the meal closes with a rolled omelette that is softer and quieter than you'd expect.
