1. Humboldt Bar

    A small, dimly lit cocktail bar where the whole thing, drinks, art, snacks, is built around a 19th-century explorer most people haven't thought about since school. It sounds like a gimmick until the cocktails arrive and they're genuinely great, ranging from bright and citrusy to smoky and bold. The crowd leans romantic, lots of close-talking couples tucked into the corner banquette, which is exactly where you want to be.
