A skyscraper millefeuille is apparently a thing here, and it sets the tone for a Michelin-starred restaurant where the chef has spent decades making the case for Normandy as a serious larder. The cooking leans hard into the region: asparagus, wild morels, Isigny cream, local pork, and whatever came off the boats. The room is contemporary, the address is just outside the city center, and the ambition on the plate is considerable.
