    A one-Michelin-star tasting menu restaurant inside Freiburg's old town, where the kitchen skips truffle and foie gras in favor of strictly regional produce and makes a compelling case for it. Sourdough baked in-house, fermented notes woven through each course, and the chefs deliver the plates themselves, explaining who grew what. The combinations are genuinely odd in a way that works: venison with chervil root, quince with chocolate.
