  1. A Scandinavian-spare dining room in the heart of Bruges, all warm wood and no fuss, where the menu changes with the market and everything arrives in the middle of the table to be shared. The cooking is seasonal and generous, pork belly with braised onion and apple being the kind of thing that shows up and disappears fast. A Michelin Bib Gourmand, which here means honest pleasure at prices that won't make you do the math twice.
