    Exposed stone walls and visible cables run the length of this narrow Paris dining room, where a Korean chef cooks solo behind an open pass, turning out a mystery-menu of modern French food with quiet Asian detours. There's no choosing: the chef decides, and the result tends toward the surprising. A creative restaurant for people comfortable handing over control, which, in the 10th, is most of them.
