    A nine-seat omakase counter where you're asked whether you're right- or left-handed before you ever arrive. KANOE holds a Michelin star and operates more like a private dining club than a restaurant: one seating, one menu, no choices. Chef Tadashi Shiraishi narrates each course, tracing techniques back to his grandmother's kitchen. The room is spare and bright, which keeps the focus exactly where he intends it.
