Ramen Noodles
The screaming-red dining room telegraphs the mission before you've ordered: this is a ramen shop built around tan tan noodles, a cross between Japanese tantanmen and Sichuan dan dan. A sister to Tsujita down the street, it runs a spice scale up to six, and the pitchers of water at every table are not decorative. Bowls come soupy or dry, and both hit hard on peanut, garlic, and chili oil.
