A kaiseki restaurant in Koto-ku where the chef trained in Kyoto under his father's footsteps, then his mentor's, and brings that lineage to a daily changing appetiser built around whatever is most seasonal that morning. The cooking is rooted in the Kyoto tradition of letting the season do the heavy lifting, so in spring the plate reads like a field inventory. Quiet, unhurried, and probably not where you end up by accident.
