Kohaku
Japanese
Koji Koizumi trained under Hideki Ishikawa and became Japan's youngest three-Michelin-star chef, which tells you something about the kitchen you're walking into. Kohaku is a kaiseki restaurant in Kagurazaka where no menu exists and the courses follow the season rather than your preferences. Truffles, foie gras, and bean chili paste show up alongside more traditional elements, which is either deeply wrong or the whole point. Two Michelin stars.
