The tlayudas here come folded rather than open-faced, crisped over a charcoal grill in a way that most Oaxacan food trucks in the Bay Area simply don't bother with. La Jacaranda is an outdoor food truck parked inside a sprawling open-air market on Alum Rock, with canopied communal seating and a menu rooted in Oaxacan tradition. The San Francisco Chronicle named it among the best restaurants in San Jose, which is a lot of credit for a truck with a charcoal grill.
