L'Ambroisie
Classic French
Antique mirrors, a grand tapestry, and black-and-white marble floors set the tone at this fine dining institution on the Place des Vosges, where the room feels unchanged by any particular decade. Bernard Pacaud built its two Michelin stars on rigorous classicism, then handed the kitchen to Shintaro Awa, formerly Eric Frechon's right hand at Le Bristol, who keeps the spirit intact while quietly making it his own.
