The chef spent serious time on the continent and brings that back through condiments, sauces, and spices that fold quietly into fish-market catches and free-range poultry. Korean ssamjang turns up on Basque pork and somehow feels inevitable. The room is charming in the way that matches the cooking: considered, warm, and not trying too hard.
