    Thick pile carpets, coffered ceilings, and smoked-glass table tops set the tone at this fine dining room inside a Courchevel hotel. Stéphane Buron, a Meilleur Ouvrier de France, builds his menus around three threads: childhood memories, Savoyard terroir, and Japan, which is a more coherent combination than it sounds. A Michelin star. The cheese trolley loaded with mountain varieties arrives like a reasonable argument for skipping dessert.
