    A Michelin-starred creative restaurant in Biarritz where the chef, classically trained at Pierre Gagnaire among others, seems to have absorbed the rules mainly to enjoy breaking them. The cooking is genuinely irreverent, fish from the Capbreton market treated in ways that would unsettle a more cautious kitchen. The name translates loosely as "the impertinent one," and the room earns it without trying too hard.
