This is a tasting-menu restaurant sharing its address with the more subterranean Tanière³ below. The chef's creative menu leans heavily on vegetables and local sourcing without making a religion of either, and a vegan version is always available. The Michelin Guide has selected it, and AAA gives it Four Diamonds.
