    The conceit here is a Korean tasting menu built around rolls, which sounds like a fusion experiment but plays out more like a revelation. Chef Sungchul Shim, who built his reputation just down the street at Kochi, runs a counter where chefs work in full view on every side, wrapping pristine fish and rice in seaweed at a deliberate pace. A Michelin star hangs over the whole thing, and the banchan tray that closes the meal earns its place.
