The chef sources Yamato vegetables from farms close enough to matter, and the seasonal hassun platters layer classical Japanese technique with quieter, newer ideas. It holds a Michelin star, and the cooking has the unhurried sincerity of someone who genuinely believes the produce deserves the attention.
