Eight seats at a counter inside a converted hotel suite, where chef Atsushi Hiraoka runs a Japanese omakase for guests who are met at reception and escorted in, as if arriving at a very civilized secret. The room is minimalist and spare, the pace unhurried, and the sake list exists for a reason. The Dolder Grand provides the address; this quietly does its own thing inside it.
