    The penthouse dining room of the Hotel Splendide Royal frames a panorama that takes in Villa Medici, Trinità dei Monti, and St. Peter's, which means the sunset does a lot of work before the food even arrives. This is a fine dining restaurant running on classical Italian technique with a modern sensibility, the menu moving between meat and seafood according to the season. Dress accordingly, and consider lingering.
