The ceviche comes in two registers here: the traditional Peruvian citrus cure and a Nikkei version that folds in Japanese technique, and both are the reason Chef José Luis Chávez graduated from market stalls to a proper sit-down restaurant on the Upper East Side. The room is clean and modern without feeling cold, the wine list holds up, and the pisco sours lean creative. A Michelin Selected spot that earns its spot by keeping the focus tight.
