Nhome holds a Michelin star for creative cooking that pulls from Scandinavia, Japan, and the Middle East without obviously belonging to any of them. Fermentation, binchotan charcoal, and brine pickling do a lot of quiet work in dishes that read stranger on paper than they taste.
