  1. Nihombashi Sonoji

    The noren out front says it plainly: tempura first, soba to finish. This Nihombashi tempura restaurant follows that order with conviction, pulling its seafood from Shizuoka's Suruga Bay and layering in seasonal vegetables sent directly from farmers. The closing bowl of soba topped with kakiage of sakura shrimp is less an afterthought than the whole point. One Michelin star, and a menu that reads as a chef's autobiography rather than a greatest-hits reel.
