    On the third floor of a city-centre townhouse, this Michelin-starred tasting restaurant is quiet enough that you notice the silence. The format runs aperitifs and snacks in the lounge first, then a procession of modern dishes that pair Swedish produce with Japanese technique. Vendace unagi and smoked reindeer tartare set the tone early, and the kitchen stays in that register throughout. Not a loud room, not a loud menu.
