Tucked into a quiet Gangnam alley, Onyva is a French tasting-menu restaurant where the chef folds Korean ingredients into classic technique without making a fuss about it. A buckwheat galette filled with grilled eel and caramelised onions gives you the idea. Six courses is the standard move, though after nine the room shifts toward à la carte and wine, which is a civilised arrangement if you got a late start.
