Bare white walls are the whole design statement at this Michelin-starred fine dining room in the 16th, which turns out to be the point: the chef, a Japanese cook who fell hard for French cuisine, fills the blankness with a surprise tasting menu built around Normandy shellfish, Breton fish, and the occasional hint of binchotan smoke. It reads like a love letter to Gallic produce, written in a hand that isn't French, which makes it considerably more interesting.
