    The former residence of the leader of the Knights of Malta is now a 39-room boutique hotel, and the marble floors in the bedrooms look freshly laid. Baroque bones are intact throughout, while the bathrooms go classic in stone and tile but sneak in walk-in rain showers. The in-house restaurant runs from a hearty breakfast down to Mediterranean dinners in an elegant cellar. Old Valletta's bars, bakeries, and historic sites are right outside.
