    Mandu arrive alongside a gochujang-laced fried chicken sauce, and the whole menu keeps moving like that, trading between France and Korea without quite settling in either country. Perception is a tasting-menu restaurant on rue Blanche where polished concrete and low light set a quietly serious tone. The Korean chef brings enough heat and precision to make the back-and-forth feel earned rather than gimmicky.
