A Michelin-starred Chinese restaurant in Roppongi Hills where every dish takes its name from two kanji characters, and the manager explains what those characters are actually gesturing at. The kitchen works from old Sichuan as a guiding principle, pulling from Chinese history and its figures: one dish nods to the hibiscus flower of Chengdu, another to the wine Tang-era beauty Yang Guifei favored. Refined and a little literary.
