    A former 13th-century abbey tucked behind a cobbled courtyard in Saint-Germain-des-Prés, this 48-room boutique hotel holds a Michelin Key. Beamed ceilings, period stonework, and lush fabrics that feel genuinely Parisian rather than hotel-generic fill rooms that look onto gardens or a quiet private street. The Spa Guerlain downstairs adds a mosaic jacuzzi and Finnish sauna. No restaurant, but the neighborhood has never once needed the help.
