Fifty-six floors up in the Island Shangri-La, the room announces itself before the menu does: marble columns, plush carpet, chandeliers, and Victoria Harbour laid out below like a screen saver nobody deserves. This is formal contemporary French dining, guéridon trolleys and all, with a cellar stocked deep in rare Château Pétrus. The chef circulates and introduces dishes personally, which is either charming or a lot, depending on your Friday night.
