    Service begins with the lights dropping and curtains parting to reveal the full kitchen brigade standing at attention, which sets the tone for what follows. This is a tasting menu restaurant in Greenpoint where the chef's classic French training and Japanese background meet in a warehouse-scale dining room. Shellfish and proteins carry the menu, and a duck and foie gras pastry feels like a find from a more extravagant era. It holds a Michelin star.
