The Michelin-starred restaurant inside Hotel Wellington has been doing Japanese-Mediterranean fusion before that phrase became a cliché. The chef pioneered the style here in Madrid, pairing Ebro delta rice in the nigiri with the finest Iberian ingredients elsewhere on the menu. The signature "huevos rotos" swaps in bluefin tuna for the usual ham, which tells you exactly where you are: a fine-dining room that takes its liberties with confidence.
