La Bien Aparecida
Cantabrian Spanish
A Cantabrian restaurant on one of Madrid's smartest streets, named for the patron saint of the region and cooking like it. The menu reads as a tour of the north: fried squid from Santander, creamy rice with clams, tripe with egg and potatoes. The recipes are old, the technique is current, and the regulars who fill the various dining rooms seem to know exactly what they're here for.
