    An Italian restaurant in Nara where the chef cures his own prosciutto and salami on site, forages wild plants and mushrooms from the surrounding mountains, and hunts the game he then cooks. The menu leans heavily into that forager-hunter lifestyle, with traditional medicinal herbs woven in to sharpen the wild character of the meat. It's the kind of place where the sourcing is the philosophy, not just the marketing copy.
