A single omakase menu, no choices, no negotiations, just Steven Wu's thirty-plus-course kaiseki progression through four distinct rooms: a garden corridor meant to evoke the changing seasons, a spare counter, a tea ceremony room, and a cocktail bar playing Japanese pop at the end. Wu trained in Tokyo and Kyoto, and the cooking follows the logic of both, seasonal and ceremony-minded. It holds a Michelin star.
