    The smoked ricotta ravioli with Oscietra caviar made the move here from Óscar Velasco's beloved former restaurant, and regulars noticed. This is a fine dining room in northern Madrid where seasonal, market-led cooking gets equal measures of technique and warmth, with a tasting menu, à la carte, and half-plate options. A private dining room called El Apartamento operates off its own kitchen. The place holds a Michelin star.
