The name nods to the Japanese art of binding, which sets the tone for a place built around robata cooking, where the grill does most of the talking. It's a casual, informal Japanese restaurant on the Manzanares side of Madrid, small enough that the omakase menu makes more sense than the à la carte. The chef's tasting path moves through smoke, char, and a few combinations that sound strange on paper and work completely on the plate.
