    The three-glass pairing here lands sherry, sake, and natural wine alongside whatever the kitchen has pulled from traditional coastal marsh gardens that day. It's a French bistro-style spot in La Latina, run by three friends who divided the duties (kitchen, floor, back office) and apparently stuck to the arrangement. The Michelin Guide gave it a Bib Gourmand for contemporary cooking that's informal but quietly considered.
