The open grill does the heavy lifting at this modern asador in Las Letras, housed in a greenhouse-style winter garden that makes the whole thing feel like eating outdoors without the weather. The Triciclo group bills it as a "temple of fire," which is a lot, but the fish pulled straight from the auction and the Galician T-bone make a reasonable case. Grilled Tudela vegetables hold their own against the meat, which is saying something.
