Tempura Fukana

A basement tempura counter in Dojima where the sign above the door was brushed by the chef's mother, a calligraphy instructor, which tells you something about the kind of place this is. The chef trained at a hotel before going solo, and his goal is tempura so lightly coated you question whether it was fried at all. Sea urchin with nori and wagyu wrapped in perilla leaf are the signature moves.
