The cocktail menu at this sleek bar on the 25th floor of the Mandarin Oriental is organized like an art collection, which tells you most of what you need to know. The current program leans into Japanese aesthetics, with milk-washed clarified drinks and shochu turning up where you might expect whisky. The room draws a polished crowd happy to pay Mandarin prices for the view and the craft, and on both counts the bar delivers.
